There are two primary commercial varieties: Ceylon cinnamon (Cinnamomum verum), often called "true cinnamon," which is native to Sri Lanka and features a delicate, complex flavor with subtle citrus notes, and Cassia (Cinnamomum cassia), which is bolder, darker, and more pungent.
