The spice is harvested by peeling the wet inner bark of specific tree species, which naturally curls into dry, hollow cylinders known as quills or sticks upon drying. There are two primary commercial varieties: Ceylon cinnamon (Cinnamomum verum), often called "true cinnamon," which is native to Sri Lanka and features a delicate, complex flavor with subtle citrus notes, and Cassia (Cinnamomum cassia), which is bolder, darker, and more pungent. The characteristic fragrance and flavor of cinnamon stem primarily from an essential oil component called cinnamaldehyde. It enhances baked goods, desserts, and breakfast cereals, while also serving as a key element in spice blends like Chinese five-spice and various curry powders.
